Use olive oils sparingly. A little goes a long way. The more bitter, the better. Two parts oil to one part vinegar.

Shake vinegar before use.

DRIZZLE OIL after roasting, grilling, and steaming.
Use oil in dressings, dips, and baked goods.

FDA approves scientific evidence suggesting that daily consumption of about 1.5 tablespoons of oils containing high levels of oleic acid may reduce the risk of cardiovascular disease. So long as they replace fats and oils higher in saturated fat and total daily calories do not increase.
